Jersey Girl Cooks… Cinnamon Sugar Apple Muffins.

Hello everyone. My name is Lisa and I have a blog called Jersey Girl Cooks. I am so happy to be a guest on Allie’s blog today. I love reading All I Eat Food but what’s even better is hanging out with Allie. Since we are both Jersey girls, I have had the opportunity to go with Allie to several foodie events and spending time with her is so much fun.
Today I am going to give you a recipe that includes apples. I am not much of a baker but when fall comes around, something comes over me and I start baking muffins. Pumpkin, Concord grape and apple muffins are some of my favorite. The muffins that I am making today taste more like donuts. Did you ever have cider donuts with the sugary outside? Even though I don’t eat donuts very often, I can’t pass up one of those donuts. All the local farm markets sell them and they are usually warm when you get them. So I created a muffin that tastes similar to the donuts.

These muffins are very easy to make and the best part is dipping them in melted butter and the cinnamon sugar at the end. Make sure you eat at least one warm. You’ll never eat a cold donut again!

Cinnamon Sugar Apple Muffins

2 cups flour
1 TBS baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
2 large eggs
1 cup vanilla yogurt (I used low-fat )
2/3 cup packed brown sugar
4 TBS vegetable oil
1 tsp vanilla
2 medium sized apples, peeled, cored and chopped
1/2 stick butter, melted
1/4 cup sugar
1/2 tsp cinnamon
Put oven rack in the middle position and preheat oven to 400 degrees. Line a standard muffin pan with paper cups. Mix together flour, baking powder, baking soda, salt and cinnamon in a large bowl. In a separate bowl, whisk together eggs, yogurt, sugar, oil, and vanilla. Add flour mixture and mix with light strokes until the dry ingredients are just moistened. Don’t over mix; batter should not be smooth. Stir in apples. Divide batter among the muffin cups and bake until a toothpick inserted in one or two of the muffins come out clean, about 15 minutes. While the muffins are baking, melt the butter in a small bowl. Combine sugar and cinnamon in a small, shallow bowl. As soon as the muffins are done, dip them one at a time in the melted butter and then roll in the sugar mixture. Set on a rack to cool. Makes about 12 muffins.
