You will need:
•2 large golden potatoes
•3 cups baby spinach
•1 cup cut and chopped broccoli
•6 egg whites
•2 TBS olive oil
•1/2 medium onion, chopped
•3 tsp fresh rosemary
•1/3 cup smoked gouda
First, saute onion in one tsp of olive oil.
When the onions are cooked, add the spinach. Cook until the spinach is wilted.
Next, wash and slice potatoes as thin as possible. Yes, this was a difficult task and my fingers were almost sliced multiple times.
Combine 2 tsp rosemary, 1 tbs olive oil, salt and pepper with potato slices.
Veggies ready? Check! Potatoes ready? Check!
Ok, now this is the slightly tricky part. And it isn’t even all that hard, I just like to whine. Before you add the potatoes, spread 2 tsp of olive oil on the skillet, making sure you include the bottom and sides.
Next combine the veggie mixture, eggs, gouda and 1 tsp rosemary. Pour the mixture into the potatoes and spread evenly.
Layer the remaining potatoes on top of the mixture.
Bake at 350º for 45 minutes.
The potatoes should be golden and crispy and your tart should be firm in the middle. Wait 15-20 minutes to allow everything to set.
Add a salad and you’re ready to enjoy a delicious meal!
